Stay warm with this easy and tasty homemade healthy pumpkin and carrot soup.
Served with your choice of yoghurt and yummy sourdough bread you can’t go wrong with this winter classic. You can use a nice natural, Greek yoghurt or coconut yoghurt (no sugar added). Full or low fat – both will work.
The best part about this gorgeous soup is that you can refrigerate the leftovers and save it for lunch the next day…that is if you have any leftovers after your friends and family try this soup! You can even freeze it for another time if you need to.
You also do not need to be a master chef to make this healthy pumpkin soup. Simple, quick and easy – it really is a great lunch, dinner or on the go snack option.

Recipe

Feeds 4 hungry people.

Ingredients

1kg Kent pumpkin (diced into cubes)
600g carrots (diced into cubes)
1 brown onion (sliced)
2 garlic cloves (crushed)
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground Turmeric
Pinch of chilli powder (optional – but I love it!)
4 cups chicken/vegetable liquid stock – depends on your preference. You could add a great chicken bone broth.
Greek/coconut yoghurt to serve
Sourdough bread toasted to serve (or any other form of bread).

Method

Fry the onion and garlic in a large non-stick saucepan until light brown.
Add liquid stock in the saucepan and bring to boil.
Add pumpkin and carrot to the saucepan and bring back to boil then let it simmer until vegetables are soft (approx. 20mins).
Add coriander, cumin, turmeric and chilli powder to the soup, gently stir, and then let simmer for a further 5 minutes.
Let the soup cool down a little (meanwhile, you can toast your bread).
Pour the soup into your blender and blend the mixture to your liking (smooth or still with chunky bits in it) alternatively you can use a blender stick.
Pour into a bowl and add yoghurt of your choice (as much as you would like) then top with freshly cut coriander. I know coriander is not everyone’s favourite – so let’s make the coriander optional – I like it though!

To finish

Serve with toasted bread and then the very last important bit….  ENJOY!
